氮肥施用对香稻香气含量的影响及其机理 被引量:12

Effects of nitrogen application on aroma of aromatic rice and their mechanism

摘要 以常规香稻品种桂香占和美香占为材料,采用盆栽试验,研究了不同时期不同氮肥施用量对香稻香气含量及其机理的影响。结果表明,增施氮肥能够增加香稻品种桂香占和美香占的游离脯氨酸的含量,从而增加其糙米香气物质2-AP的含量,但美香占仅施基肥和分蘖肥处理的糙米香气含量相对较低。 Taking the conventional aromatic rice, Guixiangzhan and Meixiangzhan as materials, using pot experiment, effects of different nitrogen application in different periods on aroma of aromatic rice and their mechanism were studied. The results showed that, nitrogen application aromatic rice Guixiangzhan and Meixiangzhan could increase the free proline content and 2-acetyl-l-pyrroline content in brown rice, while for Meixiangzhan, the treatment of basal and tillering fertilizer nitrogen reduced 2-acetyl-l-pyrroline content in brown rice.
