基于电特性参数的绿茶干燥过程在制品含水量变化规律研究 被引量:4

摘要 含水量在茶叶加工过程中扮演着重要的角色,尤其在干燥过程中将直接影响茶叶特有色、香、味、形等品质形成。本文介绍了一种基于电特性参数的茶叶含水量的检测方法,对不同频率下电特性参数值与在制品含水量进行相关性分析并建立含水量预测模型。试验结果表明,预测模型决定系数分别达0.9534、0.9628、0.958,具有很好的可靠性和准确性。 Moisture content plays an important role on the produce of tea processing, and affects directly the tea unique qualities in the drying process especially, such as color, aroma, taste and shape. Detection method of tea moisture content based on electrical parameters was intro- duced in article. Correlation analysis between electrical parameters of different frequency and moisture content of WIP will be carried out, and prediction model of moisture content will be built. The test results showed that determination coefficient of the models were respectively reach 0.9534, 0.9628, 0.958, with a good reliability and accuracy.
