宁夏高校食堂从业人员食品安全知识态度行为现况 被引量:3

Assessment of knowledge,attitudes and practices(KAP)among canteen employees regarding food safety in Ningxia Province

摘要 目的了解宁夏回族自治区高等学校食堂从业人员食品安全知识、态度、行为状况及影响因素,为采取健康教育策略和措施提供依据。方法整群随机抽取宁夏境内15所高校食堂的753名从业人员,自行设计问卷对食品安全知识、态度、行为进行自填式问卷调查。结果食堂从业人员食品安全知识总知晓率为58.95%,平均得分为(7.06±2.04)分,及格率仅为61.75%。不同年龄、户籍、文化程度、从业年限、月平均收入和是否持有健康证的从业人员食品安全知识及格率差异均有统计学意义(P值均<0.05)。从业人员在贮存加工食物、食品添加剂使用、采购索票验证等方面的行为形成率均在90%以上。结论宁夏高校食堂从业人员食品安全知识存在一定欠缺,而食品安全态度积极、行为尚可。必须加强健康教育,普及食品安全知识。 Objective To assess knowledge, attitude and practice (KAP) among college canteen employees regarding food safety in Ningxia province. Methods A total of 753 canteen employees were randomly sampled from 15 colleges in Ningxia province. A questionnaire survey regarding knowledge, attitude and practice of food safety were conducted. Results The food safety awareness among college canteen employees were 58.95%, with an average score of 7.06±2.04 and correct rate of 61.75%. Correct rate significantly differed in age, birthplace, and education level, working age, salary and health certification possession (P〈 0.05). But the proper rate of food storing, processing, additive applying, purchase certification was relatively high( 〉90%). Conclusion This study revealed incomplete food safety KAP but relatively efficient food practices among college canteen employees. Educational programs targeted at improving the attitude of food safety and regular inspections have been recommended.
