高效液相色谱法测定绍兴黄酒中有机酸 被引量:8

摘要 采用高效液相色谱法,对绍兴黄酒中的7种有机酸(草酸、酒石酸、L-苹果酸、乳酸、醋酸、柠檬酸、琥珀酸)的含量进行了测定,并与国标法的测定结果进行对比。结果显示:不同品种的黄酒,有机酸的种类和含量都有区别,绍兴黄酒中乳酸含量最高。与国标法相比,色谱法的测定结果偏高,这与黄酒的复杂成分有关。 Using high performance liquid chromatography, On Shaoxing rice wine in 7 kinds of organic acid (oxalic acid, tartaric acid, malic acid, lactic acid, acetic acid, L-, citric acid, succinic acid) content were determined, And with the national standard method of determination results. The results showed: the different varieties of rice wine, kinds and contents of organic acids have distinction, Shaoxing wine lactic acid content was the highest. Compared with the national standard methods, chromatography determination result is high, this complex is related to the composition of yellow rice wine.
