摘要
3-羟基丁酮是一种重要的风味物质和平台化合物,在食品、化工、医药等行业具有广泛的用途,目前主要以化学合成方法生产。3-羟基丁酮是许多微生物糖代谢的中间产物,以淀粉质原料,生物法生产3-羟基丁酮技术的研究已引起人们的广泛关注,本文综述了生物法生产3-羟基丁酮的研究概况,主要包括3-羟基丁酮生产菌株、代谢机理及相关酶类、代谢调节机制及高效积累策略等。
Acetoin (3-hydroxy-2-butanone) is an important flavor compound and platform chemical. It can be widly used in the industry of food, chemical and medicine. At present, the production methods of acetoin are mainly based on chemical synthetic menthods. Acetoin is an important physiological metabolite excreted by many microorganisms, In recent years, the demand of acetoin has been growing, so the production of acetoin by biological method has attracted people's attention. This paper described the present research situation of acetoin production by biological method. It mainly involves acetoin producing strains, metabolic mechanism, related enzymes and accumulation strategies.
