摘要
研究了柚皮干粉及鲜柚皮提取液 (CPE)对猪油自动氧化作用的影响。结果表明 :柚皮粉及柚皮提取液 (CPE)有很强的抗猪油自动氧化的能力 ,CPE的作用能力强于柚皮粉 ,0 .8%的柚皮乙醇提液 (CPE1) ,2 %的柚皮正丁醇提液(CPE2 ) ,乙酸乙酯提液 (CPE3)的抗氧化能力与 0 .0 2 %的BHT相当 ;且添加高达 16 %的CPE其抗氧化能力表现为明显增强并且未出现促氧化现象。
In the experiment reported in this paper, both pomelo ( Citrus grandis) peel powder (PPP) and pomelo peel extract (PPE) were effective in inhibiting autoxidation in lard. The inhibiting effect of PPE was stronger than that of PPP. The anti-oxidation of PPE with ethanol at 0.8%,PPE with n-butyl alcohol at 2% or PPE with ethyl acetate at 2% was similar to that of BHT (0.02%),The addition of PPE at a concentration as hight as 16% did not show any speeding-up of lard oxidation.
