摘要
以自制的辛烯基琥珀酸马铃薯淀粉酯为原料,用中温α-淀粉酶,控制酶解条件制备出不同DE值的酶解淀粉酯样品,并分别测定其表观粘度、溶解度、溶胀性、凝沉性、透明度等理化性能,探究了辛烯基琥珀酸马铃薯淀粉酯的DE值与其理化性能指标的对应关系,为生产过程的现场质量控制提供参考依据。
The preparation of samples with different DE values is carried out by hydrolysis ofα-amyl-ase with the homemade octenyl succinic anhydride modified potato starch as raw material.The physi-cochemical properties,including apparent viscosity,solubility,swellability,retrogradation,transpar-ency are detected respectively to explore the corresponding relation of physicochemical properties and DE value of octenyl succinic anhydride modified potato starch.It provides reference for on-site quality control in production process.
