摘要
概述了甲壳质及壳聚糖微生物降解的研究现状及最新进展，介绍了降解菌的分布，降解酶的理化性质、催化特性、在细胞中的定位及调控，以及降解产物的应用。
This paper reviews the present situation and the lastest progress in microbial hydrolyzing of chitin and chitosan, deals with the microorganism distributions, physical, chemical and catalytic properties, localization in cells and regulation of chitinases, and briefs the applications of hydrolyzing products.
