摘要
以5种河北省昌黎产区的葡萄酒为研究对象,利用Amberlite XAD-2树脂吸附,并用戊烷/乙醚(体积比1∶1)和甲醇洗脱,可有效分离葡萄酒中的游离态芳香物质和键合态的芳香物质。游离态芳香物质进行GC-MS分析,鉴定其中各芳香物质的成分,为葡萄酒香气成分的研究提供理论基础。通过对键合态芳香物质进行抗氧化性质测定,与抗氧化性质较强的几种水果、蔬菜比较判断其抗氧化性的大小,为葡萄酒抗衰老机制提供参考依据。
The flee and boundaromacompounds were effectivel; separated using Amberlite-^-2 resin"adsorption with pentane/ethyl ether (1 : 1) and methanol elution in wines from Hebei province Changli producing areas. By identifying the aromatic constituents using GC-MS from free aroma compounds lay the foundation for the study of wine aroma. Antioxidant properties of bound aroma compounds were evaluated, compared with the antioxidant properties of different beverage, wine, jam, jelly antioxidants, which provide the basis for the red wine an-aging mechanism.
