摘要 绿原酸类物质是植物体中重要的次生代谢产物,存在于多种植物中。由于绿原酸类物质具有清除自由基、抗菌消炎、降血压血脂等多种生物活性,已成为活性物质研究的热点之一。本文综述了绿原酸类物质的组成结构、提取纯化及定性定量分析方法、生物活性和应用领域的研究进展,旨在为绿原酸类物质在食品、医药保健品及化妆品等领域的开发应用提供一定的数据参考。 Chlorogenic acids (CGA), existing in a variety of plants, is an important secondary metabolites. CGA has multiple biological activities such as scavenging free radicals, anti-bacteria, anti-inflammation, reducing blood pressure and blood lipids content, etc. Therefore, the research of CGA has become one of the hotspots of the active substance research. In this paper we summarized the research progresses of CGA on its structure, the extraction and purification methods, the qualitative and quantitative analysis methods and its biological activities and application areas, aiming at providing some data reference for the development and application of CGA in the fields of food, medicine and cosmetics.
