摘要
电子鼻是新近发展起来的模拟人工嗅觉的设备,由于其费用经济,检测速度快,可以客观、自动、无损的鉴定食品的风味物质,因此在食品工业中的应用越来越广泛.主要综述了:①电子鼻的结构,重点介绍了电子鼻的样品处理系统和检测系统,分析了样品处理方法、原理及其需要优化的参数,同时对检测系统的传感器类型、原理及其优缺点进行了介绍;②电子鼻在食品科学的几个方面如过程监控、真伪鉴别、货架期以及新鲜度等方面的应用.由此可以看出电子鼻必将得到越来越广泛的应用.
Electronic noses ( e-noses ) are newly developed instruments which mimic the artificial sense of smell.These devices are used more and more widely because the e-noses can detect and distinguish odors objectively , precisely , automatically , non-destructively and at low cost .The review :① presents the structure of electronic nose , describes the sample handling system and detection system ,analyses the sample handling methods , principle and the main parameters that have to be optimized ,introduces types , mechanisms , advantage and disadvantage of common electronic-nose gas sensors .②reviews the applica-tion of electronic nose in food science in particular in the field of process monitoring , shelf-life investiga-tion, freshness evaluation and authenticity assessment .It is evident from the literature survey that the e-Nose will be more widely used .
