摘要
以生菜为试材,以叶绿素含量、维生素C含量、可溶性糖含量、失重率为指标,研究了不同浓度海藻酸钠涂膜对生菜贮藏效果的影响。结果表明:采用浓度为0.2g/L海藻酸钠涂膜可以有效地减缓生菜失重、叶绿素的降解、可溶性糖的增加,维生素C的损失;海藻酸钠涂膜处理能够提高生菜的外观品质,对生菜起到保鲜效果。
Taking lettuce as material,with chlorophyll content,vitamin C content, soluble sugar content and weight loss as index,the fresh-keeping effect of coating with sodium alginate on lettuce were studied. The results indicated that the 0. 2 g/L of sodium alginate could slow down weight, the reduction of chlorophyll content, the increasing of soluble sugar, the reduction of vitamin C content. Coating with sodium alginate could enhance the apparent quality of lettuce to have the flesh-keeping effect.
