摘要
从萌发的四川白魔芋球茎中分离纯化β -甘露聚糖酶 ,该酶的最适 p H为 5.1,最适温度为 50℃ ,有较好的热稳定性和较宽的 p H适宜范围 ( 5.0~ 9.0 ) ,其米氏常数 Km =5.4 9× 10 - 2 %。该酶可将球茎中所含的甘露聚糖降解成二糖、三糖、四糖和五糖等水溶性的甘露低聚糖。
mananase hydrolyzing konjac mannan into glucomannan oligosaccharides was extracted and purified from germinating Amorphophallus albus tubers. The pH value and temperature for optimum catalysis of the enzyme were 5.1 and 50 ℃, respectively. The K m constant of the enzyme for Amorphophallus albus mannan was 5.49×10 -2 %.
