摘要
本文介绍了畜产品贮藏与加工的范畴以及该产业和学科涵盖的内容,其中农业学科和工程学科交叉是其显著特点之一。根据发达国家的经验,随着中国从植物农业向动物农业转型,畜产品贮藏与加工产业将在中国经济中具有愈加重要的地位和作用。2011年至2012年我国畜产品贮藏与加工基础研究主要集中在肉的成熟与质量控制、凝胶和风味,乳的乳酸菌发酵、益生菌及其蛋白组学,蛋的抗菌特性、活性肽和致病微生物等;技术研究则关注非热加工(如超高压和脉冲光处理)、发酵剂改良、掺假鉴别、真实性溯源(如物联网和基因芯片等)和其他用于开发新的或改良传统的畜产制品的高新技术。国际畜产品贮藏与加工学科研究则注重生物、环境、资源等领域技术以及其他新技术和新研究方法的结合。本文还就我国畜产品贮藏与加工学科未来一段时间的研究方向提出了建议。
What is land animal products storage and processing itself and what its industry and discipline were introduced. Interdiscipline between agriculture and engineering is the main chareteristics for it. Baesed on the experience from developed countries, with the transition from plant agriculture to animal agriculture in China, land animal products storage and processing is becoming a more and more significant industry and will play a new economic role in China. Progress in basic and technological research concerning meat, milk and egg storage and processing in China during 2011-2012 was described. Basic research focus was on meat conditioning, quality control, geiation and flavor; lactic acid bacteria milk fermentation, probiotics and proteomics; egg antimicrobial characteristics, active peptides and pathogenic microbiorganisms etc. Technological research focus was on non-thermal processing, such as ultra pressure and pulsed light treatment, starter culture improvement, tracing and identification of adulteration and authenticity, such as internet of things and gene chips, and other high and emerging technologies, particularly used in developing high quality animal products and ameliorate traditional Chinese animal products. Trends of the international research in land animal storage and processing discipline were discussed regarding combination with biotechnology, enviorment, resource, new technologies and methods. Finally, research directions for China land animal products storage and processing discipline were prospected.
