摘要
本文以莱芜猪肉质育种为例,介绍了在屠宰线上对胴体的肉色、大理石纹、特别是肌内脂肪进行主观评定预测的简单易行的方法,其结果可用于肉质选种选育。
A simple and feasible viewing way for objectively checking meat color & marbling and especially estimating IMF was introduced for predicting the meat cuts quality at slaughtering line. The results of which can be used as a reference for selection of Laiwu Pig breeding as an example.
