摘要 [目的]规范涪陵榨菜(茎瘤芥)半成品收购的评价过程,构建榨菜半成品收购的综合评价体系,以对榨菜加工过程进行质量控制。[方法]在现有榨菜半成品收购的验收项目感官要求和理化指标基础之上,通过判断矩阵法确定检测指标的相对权重,并有效利用模糊综合评价法,将感官要求和理化指标进行统一的综合评定,从而计算榨菜半成品的综合得分。[结果]通过模糊综合评价法,能够对榨菜半成品进行合理的评价,并给出综合评价得分,为收购定价和分类贮藏提供科学依据。[结论]利用模糊综合评价法能够建立榨菜半成品收购的综合评价体系,并能够降低收购成本和提高评价效率。 [ Objective ] To adjust evaluation process of purchasing of semi-finished Fuling Zhacai ( Brassica juncea var. tumida Tsen et Lee), to establish a scientific evaluation system, and to implement the quality management of mustard processing. [ Methods ] On the basis of the checkup items of semi-finished products which is based on the sense requirements and physicochemical indicators, determine the relative weights of testing indexes with the judgment matrix method, and make a comprehensive evaluation by effective use of fuzzy comprehensive eval- uation method, so as to calculate the integrate scores of semi-finished products. [ Results ] By the fuzzy comprehensive evaluation method, it is able to carry out the reasonable evaluation of semi-finished mustard products, and give a comprehensive evaluation score, which will provide a scientific basis for purchasing pricing and classification of storage. [ Conclusions ] Using the fuzzy comprehensive evaluation method, it is a- ble to establish a comprehensive evaluation system for purchasing of semi-finished mustard, reduce the purchase cost and improve the evalua- tion efficiency.
