摘要
以鲐鱼蛋白水解液为原料,制备低分子肽运动饮料,确定饮料的配方、杀菌条件,考察了产品的各项指标及保藏情况。
The optimal formula and sterilization condition for preparing sport beverage with hydrolyzate of macherel protein were determined.The quality index and storage of product were examined by the mean time.
