摘要
就构成因素的庞杂和集中程度而言,中国饮食是世界上兼容性、集合性最典型的。这种兼容性或集合性,无论从食材的选用、饮食的烹调,抑或食味的品鉴、菜系的考究、享用的仪式和做派而言,都是如此。从中国哲学和文化的整体结构存在,可发现以味为基础的、贯穿中国饮食美学史的内在肌理,由主体化的认知将自然、社会及饮食本身的要素有机融合起来,形成了独具中华民族特色的、不断实现民族精神内在超越的饮食美学观念和趣味。
Considering the complexity and concentration of component factors,Chinese cuisine is regarded as the most typical in the world. This is shown in the selection of ingredients,cooking means,tasting model,style of cooking,and the elegant ceremony in catering. From the overall structure of China philosophy and culture,it can be found the inherent texture based on the taste throughout the history of China diet aesthetics. Based on the organic integration of nature,society and the elements of the diet itself,the diet aesthetic concepts and taste with unique characteristics of the Chinese nation has been formed and has achieved inherent transcendence continuously.
