籼稻储藏品质的电子鼻快速检测方法研究 被引量:9

摘要 本研究用国标方法和电子鼻分别检测3种储藏年份2个品种籼稻的含水量、粗脂肪含量、脂肪酸、发芽势、发芽率等理化指标和顶空气体,并采用主成分、相关性和主成分回归进行了数据分析。结果表明,电子鼻能区分不同储藏年限和品种的籼稻;电子鼻信号和稻谷储藏品质之间有紧密相关性;保温温度是影响各探头辨别能力的测试条件之一,其中8个传感器探头对不同保温温度处理过的籼稻挥发成分具有良好的辨别能力,较高保温处理能增强电子鼻传感器的辨别分组能力;不进行保温处理能真实的反应样品本身的挥发气体组成,不影响电子鼻对籼稻品种和储藏年限的区分能力,并且能准确预测样品中脂肪酸含量和发芽指标。 Physiochemical indexes and headspace analysis of Indica rice (three kinds of different storage years and two varieties) have been measured by GB methods and electronic nose (e-nose), respectively. Principal com- ponent analysis, correlation analysis and principal component regression were employed to research the data. The re-suits show that storage life and varieties of Indica rice can be discriminated by e - nose. Strong correlation between e - nose signal and storage quality were discovered. Incubation temperature was important for the discriminability of e - nose sensors ; eight sensors were with good ability to distinguish samples at different incubation temperature. Ther- mal treatment can enhance the discriminability of e - nose. The study also finds that sample without incubation treat- ment can be treated with the volatile gas composition of the sample itself; not affect discriminability of the e - nose for Indica rice varieties and storage years. Fatty acid content and germination of the sample can also be predicted accu-rately.
