对乳酸菌在酸胁迫、胆盐胁迫、高温胁迫、冷胁迫、氧胁迫以及营养胁迫条件下的分子机制进行详细阐述,旨在为乳酸菌资源的更好的利用提供理论基础。
The stress responses and molecular mechanisms of Lactic add bacteria (LAB) responding to environmental stress are studied in recent years. In this paper, the LAB were discussed at the molecular mechanisms under acid, bile salt, heat shock, cold and nutrition stress conditions, will provide theoretical basis for utilizing the swains resources.
