摘要 目的了解甘肃省食用菌铅镉污染状况,掌握食品安全监管重点,为监管部门制定监测方案提供可靠依据。方法GB/T5009食品安全国家标准第一法石墨炉原子吸收法。结果全省抽检的182份食用菌中,铅未超标,合格率为100.0%,镉超标6份,合格率为93.4%。结论总体来说,食用菌合格率较高,但香菇中镉污染不容小觑,金钱菇镉污染也呈上升趋势。因此,为了保障食用菌安全食用,在加强食用菌全生产过程监控的同时,监管部门需继续加强监测检验,保证食用菌镉零超标。 Objective To understand the contamination status of lead and cadmium in edible fungi in Gansu province and to provide reliable basis for formulating the monitoring program of food safety. Methods The contents of lead and cadmium were detected in edible fungi samples by graphite furnace atomic absorption spectrometry( GFAAS),the first method of the GB / T5009. Results Among the total 182 edible fungi samples,the pass rate of lead was 100. 0%,and that of cadmium was 93. 4%. Conclusion The qualified rate of edible fungi was higher on the whole in Gansu province,but cadmium pollution in mushrooms and increasing cadmium pollution in mini shiitale mushroom should not be overlooked. Therefore,the monitoring of the entire mushroom production process should be strengthened to ensure the cadmium content in mushroom in accordance with the national hygiene standard,and the related departments should also strengthen the monitoring and inspection of edible fungi to ensure the food safety.
