摘要
本文研究了辣椒β-胡萝卜色素的提取工艺及其稳定性。结果表明,提取该色素的最佳工艺条件为:以石油醚为溶剂提取辣椒中的色素,适宜的提取条件为:温度为50℃、料液比为1g:15 mL、浸提时间1.5h时。该色素具有良好的热稳定性;在光照的条件下易分解;辣椒色素的耐还原性较好;Cu2+对辣椒色素溶液的稳定性有较大的影响,而Mg2+、Al3+对色素几乎无影响。
This paper mainly studied the extraction and stability of the β- carotenone from chili. The experimental results showed that when the petroleum ether as the solvent, the optimum extraction conditions were as follows : extraction temperature for 50℃, extraction time for 1.5hours and ratio of material to liquid is 1 : 15 ( g / mL). It had been found that the pigment have a good thermostability; The pigment can be easily resolved under the condition of light; Reducing agent ,Al3+ and Mg2+ have little effect on pigment, but Cu2+ can reduce the pigment stability.
