Jiumianpian, literally ＂pelletized thick noodle pieces,＂ are a traditional snack in Linxia Hui Autonomous Prefecture, Gansu. Easy to prepare, they are served indoors or outdoors as a picnic snack. The way men and women prepare them is different： mianpian ＂pelletized＂by a young man, are called ＂solid noodles＂ and are usually big, thick, and hard, ideal for satisfying hunger; those made by woman are called ＂nail noodles.＂ and are usually square, pretty uniform in size and thickness, smooth, tasty, soft but a little bit of bite, the flavor coming through the longer you chew them
