摘要 胶原蛋白作为一种重要的动物蛋白资源,在食品工业中应用非常广泛。文章介绍胶原蛋白的结构组成、提取方法,阐述利用胶原蛋白制备可食性膜的工艺及其应用,并展望可食性胶原蛋白膜的发展方向。 As an important animal protein resource, collagen has been widely used in the food industry. This paper describes the construc- tion and composition of the collagen, the methods of extracting colla- gen, and sets forth the preparation process of edible film with colla- gen and its application and prospects the development of the edible collagen merabrane.
