Food Treatment Technology by Pulse Electric Field

介绍了脉冲电场食品非热处理技术的概念与方法 ,结合国外目前的研究状况 ,给出脉冲电场系统及其参数 ,分析了食品的电特性及细胞电击穿的机理。

The principle and technique of food non thermal treatment by pulse electric field is introduced in this paper. Based on the research abroad, we give out a pulse field system with its parameters for this purpose, analyse the food behavior under electric field and the electroporation mechanism occurred in microbial cells. By some experimental results we give out the feasibility and extensive developing future of this technology.
