摘要
本文以廉价农产品玉米为原料,以色价为指标,对玉米发酵生产红曲的工艺条件进行了研究。采用单因素和正交试验确定了紫红曲霉CICC 3.438固态发酵生产红曲的工艺条件为接菌量9%,发酵温度30℃,培养时间11 d,在此条件下红色价为2 776.35 U/g。玉米固态发酵生产红曲发酵条件的研究和确定,可为玉米固态发酵生产红曲提供技术支持。
Taking color value as index, the production conditions for red mould were researched using cheap corn as substrate. By sin- gle factor experiment and orthogonal experiment design, the optimal conditions of red mould production of Monaseus purpureus CICC 3.438 u- sing solid state fermentation was determined as inoculum volume at 9% , fermentation temperature at 30℃ and fermentation time at 11 d. And under these conditons, the maximum red color value attained 2776. 35 U/g. The research and detetermination of fermentation condition for red mould using solid state fermentation of corn can provide technical support for red mould production.
