摘要
采用scheffe单形重心混料试验设计法 ,对以甘薯淀粉为主 ,配以玉米及豆类淀粉粉团的表观粘度进行了试验 ,试验表明具有最佳粉团特性的原料配比为甘薯淀粉∶玉米淀粉∶豆类淀粉 =75∶5∶2 0。该研究对于扩大粉丝生产规模 。
Experimented on the apparent viscosity of the sweet potato starch mixed with corn and bean starch by the Scheffe trial way for single shape barycenter mixture,the results show that the raw material proportion with optimal characteristics of starch is sweet potato starch:corn starch:bean starch=75∶5∶20.This study has important application value for scale up of vermicelli production,quantity advancement and resource exploitation.
