摘要
主要通过对不同品牌鸡精的吸潮性和质构特性的测试和相关性分析,得出鸡精的吸潮性和硬度呈极显著负相关性,能够快速准确反映鸡精的吸潮速度,对于提高产品的研发效率、提升产品品质有着积极的意义。
Test the relationships between texture characteristics and moisture absorption of different brands of chicken essence. The results indicated that there was a greatly significant negative correlation between the moisture absorption and the hardness. The rate of moisture absorption could be reflected rapidly and exactly. The conclusion showed a positive meaning on improving the efficiency of research and raising the product quality.
