去离子水浸提婺源夏茶中茶多酚的工艺优化 被引量:4

Optimization for Extraction Condition of Tea Polyphenol from Wuyuan Summer Green Tea by Deionized Water

摘要 以去离子水为浸提溶液,通过正交试验对影响婺源夏茶中茶多酚浸出率的工艺条件进行了优化。结果表明,最佳条件为:料液比为1∶40(g/mL),浸提温度80℃,提取2次,每次15 min。在此浸提条件下,茶多酚的最终浸出率可达24.19%。温度对茶多酚浸出率影响最大,其次是料液比,而浸提时间的影响最小。 In this paper, deionized water was used as exWacfion solution to optimize for the extracting ratio of tea-polyphenol from Wuyuan summer green tea by otthogonal experiments. The results indicated that the optimum extracting condition was leaching twice at 80 %, for 15 rain each time with the liquid to material ratio was 1 : 40 (g/mL). Under these conditions, the optimum exlracting rate of TP could reach 24.19%. And the order of the ability of effecting the extracting rate of Tea-Polyphenol were exlmcfing tempemtttw〉 the liquid to material ratio〉 extracting frequency 〉 exWacting time.
