摘要
食品工程原理是高等院校食品科学与工程、食品质量与安全等专业的一门重要专业基础课程。以提高教学质量为目标,结合教学实践,从课堂教学和实验教学2个层面,对食品工程原理课程的教学改革思路进行初步探讨,以推动教学改革进程,促进课程体系建设。
Principles of food engineering is an important professional basic course in the specialties of food science and engineering, and food quality and security. Based on our teaching practice, we preliminarily explore the teaching innovation of the curriculum from aspects of classroom and experimental teaching to improve teaching quality, accelerate the teaching reform, and promote the curriculum development of food engineering principles.
