摘要
大豆中含有蛋白质、脂肪、膳食纤维、低聚糖、矿物质等营养物质.近年来的研究表明,大豆的营养价值及保健功效使大豆综合利用的程度不断加深.本文对大豆的营养成分进行综述,并对大豆的综合利用进行了简单的分析,为大豆未来的产业发展提供参考.
Soybean nutrition is rich,which contains protein,fat , dietary fiber, Oligosaccharide and minerals . Recent Researches showed that nutrition value and health care efficacy of soybean was gradually found and its comprehensive utilization is continually deepened. The paper summarized nutritional components and physiological functions of soy-bean, and its reseach status ,to provide reference for its industry development.
