摘要
潮州菜历史悠久,文化底蕴深厚,保留了诸多中国传统饮食文化的精华,具有食材考究、制作精湛、追求本味、时令养生、开放兼容等独特风格。尤其是调味料种类繁多、内涵丰富,既保留了古代酱文化的精髓又结合地域物产,并且和海外饮食文化交流融汇,自成一体,堪称一绝。透过古代典籍和韩愈、杨万里等人的诗歌作品,可以帮助我们寻觅潮州菜往古的滋味及其历史脉络。
Teochew cuisine has a long history and rich cultural heritage, and retains the essence of Chinese traditional food culture. It has many unique styles, such as strictness in material selectiion, the fine workmanship, the ingredient of natural taste, special attention to seasonal health, an open and receptive attitude, and especially a wide range of condiment sauce rich in contents. The condiment sauce not only retains the essence of ancient Chinese sauce culture, but also has the innovation from the cultural exchange between regional products and overseas food which has its own style and become a unique wonder in Teochew cuisine. In the ancient books and records and the poetry by Han Yu and Yang Wanli, we can find the ancient taste and the trace in history of Teochew cuisine.
