摘要
[目的]研究不同贮藏方式、贮藏条件、贮藏时间对货架期台湾青枣品质的影响。[方法]以新鲜台湾青枣为试材,研究在25℃室温下,20 d贮藏期间新鲜台湾青枣分别在3种不同的贮藏方式下(裸露在空气中、打孔保鲜袋内、无孔保鲜袋内)其葡萄糖含量的变化情况。[结果]试验表明,裸露在空气中贮藏的台湾青枣,其葡萄糖含量表现为先减少后增加;在打孔保鲜袋内贮藏的台湾青枣,葡萄糖含量变化呈现为增加-减少-增加-减少的波动,总趋势为减少;在无孔保鲜袋内贮藏的台湾青枣,葡萄糖含量表现为减少-增加-减少,总趋势也为减少。[结论]研究可为解决鲜枣的保鲜提供一定的参考依据,以延长鲜枣的货架期。
[Objective] To study effects of different storage methods,conditions,time on quality of Zizyphus mauritiana in shelf period.[Method] The glucose contents of Z.mauritiana in shelf period were studied in three different storage methods (exposed in the air,punching bag storage,preservation bags without holes) at 25 ℃ during storage of 20 days.[Result] The results showed that the glucose content of Z.mauritiana exposed in the air initially decreased and then increased with time.The glucose content of Z.mauritiana in punching bag storage revealed a general trend of decrease,though it first increased,subsequently decreased,next increased again,and then decreased again with time.The glucose content of Z.mauritiana in preservation bags without holes also showed a general trend of decrease,although it first decrease,subsequently increased,and then decreased again with time.[Conclusion] The study can provide a certain reference basis for fresh keeping and prolong shelf period of jujube.
