姜精油微胶囊化工艺研究

摘要 应用喷雾干燥技术对超临界CO2萃取得到的姜精油进行微胶囊化,以麦芽糊精与阿拉伯胶为壁材,通过单因素及正交实验对喷雾干燥温度、壁材比例、芯壁材比例进行了研究,得到最佳微胶囊化工艺:即喷雾干燥温度为165℃,壁材比为2∶1,芯壁材比为1∶9,此时姜精油的微胶囊化效率86.36%。采用扫描电镜及激光粒度分析对最佳工艺参数下的姜精油微胶囊进行了表征,其平均粒径为0.952μm,具有良好的纳米级微观结构。 With the microencapsulation of ginger essential oil extracted with supercritical C02 by spray drying, and with maltodextrin and arabic gum as wall materials, the paper studies the temperature of spray drying, the propor- tion of wall materials and cell wall materials. Optimal process conditions are obtained by the means of single factor a- nalysis and orthogonal method: the temperature of spray drying is 165℃ ; the mass ratio of wails is 2:1 ; the mass ra- tio of core material and wall is 1 : 9. Given the conditions mentioned above, the efficiency of microencapsulation of ginger essential oil is 86.36%. Microcapsule of ginger essential oil obtained on the optimal process is characterized by means of scanning electron microscope and laser particle size analysis, which suggests that the average particle size of these microcapsules is 0.952μm, with a good microstructure in nanometers.
