摘要 谷氨酰胺是人体及其他哺乳动物血浆中含量最丰富的一种游离氨基酸,在生物体代谢中起着举足轻重的作用。谷氨酰胺在酸性、加热等条件下不稳定,而含有谷氨酰胺的小肽稳定性非常好,具有很高的利用价值。系统地阐述了谷氨酰胺及其结合肽的生理功能及应用、谷氨酰胺结合肽的优势、生产方法、肽中谷氨酰胺的检测方法。 Glutamine is the most abundant free amino acid in human and other mammalian plasma, whichplays an important role in the organism metabolism. Glutamine is unstable in acid and heating conditions,but the small peptides containing glutamine are very stable, which has a high value in use. The physio-logical functions and application of glutamine and its binding peptide, the advantages of gin - bound pep-tide, the method of production, and detection of glutamine were systematically described.
