鸡蛋中S-卵白蛋白的研究进展 被引量:2

摘要 非受精鸡蛋长期储存和受精的鸡胚胎孵育期间,天然的卵白蛋白(N-卵白蛋白)会自发地向S-卵白蛋白转变。本文就S-卵白蛋白的形成及其对构象和品质的影响等研究进展进行介绍,针对相关问题提出了初步的研究方案。
