正交试验优化竹筴鱼去脏加工工艺 被引量:2

摘要 为降低去脏过程中鱼肉损伤,提高内脏去除率,优化去脏机剖切及去脏机构技术参数,利用自制小杂鱼去脏试验平台,以竹筴鱼为试验对象,应用正交试验设计,研究传送带线速度、剖切刀转速和去脏轮转速与竹筴鱼去脏后可接受性评分之间关系。结果表明,各因素对竹筴鱼去脏后可接受性评分影响大小依次为:去脏轮转速>传送带线速度>剖切刀转速。适合竹筴鱼去脏的较优工艺参数为:传送线速度2.00 m·s-1、剖切刀转速1 100.0 r·min-1、去脏轮转速为50.0 r·min-1;在此条件下去脏的可接受性评分均值为98.6,可满足去脏加工的工艺要求。 In order to avoid the fish damage and increase gut removal rate in gutted process, optimizting the operation parameters of cutted and gutted institution, adopting gutted effect test with self-developed gutted mechanism with the Trachurus japonicus for the test object, using the orthogonal experiment design, the effects of acceptability evaluation with transmission speeds, cut knife rotation speeds and gutted wheel rotation speeds were studied. The result showed that the effect degrees of 3 factors on the acceptability evaluation was as following: gutted wheel rotation speeds〉transmission speeds〉cut knife rotation speeds. The best parameter combination under the gutted process of Trachurus japonicus experiment conditions was obtained as following: the transmission speed was 2.00 m ·s^-1, the cut knife rotation speed was 1 100.0 r · min^-1, the gutted wheel rotation speed was 50.0 r ·min^-1, the acceptability evaluation was achieved 98.6, at this time, which could meet the needs of gutted process.
