摘要
随着对乳酸菌研究的不断深入,乳酸菌的作用越来越受到重视。一些乳酸菌类如肠球菌、片球菌、酒球菌和乳杆菌,通过氨基酸脱羧酶的脱羧作用产生的生物胺类物质,在食品发酵、青贮饲料发酵、生物制剂和公共卫生方面发挥着重要作用。通过对产生物胺乳酸菌的生理生化、代谢产物及生物胺利用和危害三大方面进行总结和阐述,进一步提高人们对产生物胺乳酸菌的认识和利用,这对优良菌种及生物制剂的研发具有重要意义。
Along with progress of the study on lactic acid bacteria,it is playing a more and more important role.Biogenic amines which produced by decarboxylation of amino acid decarboxylase in some lactic acid bacteria such as Enterococcus,Pediococcus,Oenococcus and Lactobacillus,plays an important role in food and silage fermentation,biological agents and public health.This paper mainly induced the the physiological and biochemical,the metabolites of lactic acid bacteria,producing amines,the utilization and harm of biological amines.To further improve people's awareness and expolit of amines of lactic acid bacteria is of great importance to develop excellent strains and the biological agents.
