摘要
我国是禽蛋生产和消费大国,蛋品加工历史悠久。随着人们生活节奏的加快,方便风味蛋制品的市场需求也随之增大。主要介绍卤蛋、烤蛋、鸡蛋干等国内开发程度较高的几种风味蛋制品在配方、工艺、风味等方面的研究进展,为进一步开发风味蛋制品提供参考。
China is the main country of egg production and consumption, which has a long history of processing. As people life rhythm speeding up, convenient and flavory egg products market demand also will increase. This paper introduces the research progress of formula, technology, flavor on marinated egg, dry baked egg, egg curd, which provide a reference for future researches of flavor egg products.
