摘要
研究了不同极值气体条件下贮藏过程中,玫瑰香葡萄果实内乙醇和乙醛含量的变化规律。结果表明,低O2与 CO2能明显引起葡萄浆果中乙醇和乙醇含量的升高,高CO2条件对乙醇含量的影响大于对乙醇含量的影响,而 O2浓度的影响恰好相反。
The concentration of ethanol and acetaldehyde in Meiguixiang grape after 120 day storage was studied.lt showes that low O2 and high CO2 cause marked increase of ethanol and acetaldehyde in grape.The degree of effect Of CO2 on acetaldehyde is bigger than that of O2 and the effect of O2 and CO2 on ethanol is just contrary.
