摘要
山药又名薯蓣,是薯蓣科、薯蓣属中能形成地下块茎的栽培种。山药含有多种对人体有益的生物活性成分,如山药多糖、薯蓣皂苷、黄酮、山药碱、多酚、尿囊素等。人们在加工、食用山药时通常将山药皮作为废料丢弃。研究表明,山药皮含有大量多糖类、黄酮类、皂苷类和多酚类等活性物质。研究山药皮中重要生物活性成分含量、提取和纯化工艺,将会极大地促进山药皮的开发利用。
Chinese yam,which belongs to Sect.Stenophora Uline of Dioscorea in Dioscoreaceae,is a perennial twisted herbal liana.It contains many bioactive components such as polysaccharides,saponins,flavonoids,alkaloids,polyphenols,allantoin and so on,which are beneficial to the human body.Yam peel is usually discarded as waste in the processing and cooking of yam.In the study,we found that yam peel also contained many bioactive components such as polysaccharides,saponins,flavonoids and polyphenols.So the research on the content,extraction process and purification of important bioactive components in yam peel will greatly promote the utilization of yam peel.
