规模化养羊舍饲环境及工程设施与羊肉品质关系的研究 被引量:4

摘要 为对羊舍单位面积与羊肉品质的关系提供科学依据,对规模化养羊不同跨度圈舍及不同饲养密度与羊肉品质的关系进行了研究。选用健康、当年断奶的144只羔羊,随机分为4组,每组36只,每组在饲喂同一日粮的条件下,采用4种不同密度条件进行饲喂试验,即:1.40、1.05、0.70和0.35 m2/只,饲喂45 d,每组屠宰4只,测定其肉色、大理石纹、pH值、肌肉剪切力等指标。结果表明:宰后肉色、大理石纹差异均不显著(P>0.05),试验Ⅳ组(0.35 m2/只)pH值最低(6.38±0.22),肉的酸度较高,肌肉剪切力最高(4.37 kg/m2±0.48 kg/m2),嫩度最差,但各组间差异均不显著(P>0.05)。说明规模化养羊不同跨度圈舍及不同饲养密度对羊肉品质影响不显著。
