摘要
研究以野苏叶、干红辣椒、狗肉为主要原料,研制开发一种风味狗酱制品。通过正交试验确定最佳工艺配方是狗肉用量为6%,野苏子叶粉用量为15%,干红辣椒用量为20%,豆瓣酱用量为8%。此产品具有野苏子、狗肉特异的香味,营养丰富,是集营养美味于一身的调味酱。
In this paper, Pedicularis grandiflora, red chilli, dog meat are as main raw materials to develop a kind of flavor dog sauce product. The orthogonal design is adopted to research the optimized formula. The result shows that the optimized formula is dog meat 6%, Pedicularis grandiflora 15%, red chilli 20%, bean sauce 8%. This product has unique fragrance of Pedicularis grandiflora and dog meat, rich nutrition, is a kind of condiment with nutrition and delicacy.
