摘要 运用响应面方法分析乳酸对水产品中单核细胞增生性李斯特菌(LMO)的作用效果,并建立回归方程,以微生物数量为指标探索乳酸对水产品中LMO的抑制作用。结果表明乳酸对水产品中LMO具有明显的抑制作用。 Response surfce Methodology (RSM) was used to study the effect of lactic acid to Listeria monocytogenes(LMO) in aquatic product and regression equation was constructed in this paper. Results showed that lactic acid could inhibit the growth of LMO obviously. Regression equation deduced from results of this study helped to prevent LMO from polluting aquatic product or less LMO on aquatic product by choosing different temperature, time and concentration of lactic acid.
