摘要
槐糖脂是一种糖脂类生物表面活性剂,主要通过一些酵母菌发酵合成并分泌到胞外。随着研究的不断深入,槐糖脂种类不断增多,它们的区别主要表现在其结构及分子组成上,这最终导致了其理化性质和生物活性的不同。发酵底物的多样性是槐糖脂结构及分子组成差异的最主要的因素。本文主要从碳源和氮源上对发酵底物进行分类综述。
Sophorolipids, mainly synthesized by some yeasts and secreted into the extracellular, are one kind of biosurfaetant. With the deepening of research, the kinds of sophorolipids, differences of which were largely shown in their structures and composition and resulted in various physicoehemical properties and bioactivities, are gradually increasing. Diversities of fermentation substrates are primary factor resulting in varieties stuetures and compositions of sophorolipids. In this paper, fermentation substrates were classified and reviewed.
