显微图分析马铃薯直链淀粉对氯化钠的吸附作用

摘要 以马铃薯淀粉为原材料,通过回生法制备得到马铃薯直链淀粉,进而利用显微图分析其对不同浓度氯化钠的吸附作用。研究结果表明,氯化钠首先在马铃薯直链淀粉的非还原端吸附聚集,随后沿着淀粉链不断向前聚集,被吸附后的氯化钠不能形成规则的立方形晶体。淀粉液中氯化钠浓度高于1 mol/L时,聚集6 h后未被淀粉吸附的氯化钠可聚集形成规则立方形晶体。氯化钠可能通过竞争水分子与直链淀粉的结合降低淀粉糊的黏度。 Potato amylose was prepared from its native starch by the method of retrogradation, and the absorption of NaC1 with different concentrations by potato amylose was analyzed by micrographes. The results showed that absorbed sodium chloride first gathered at the non-reducing end of potato amylose, then moved forward along the starch chain. The adsorbed sodium chloride can not form a regular cuboidal crystal. The non-absorbed sodium chloride could form regular crystals when its concentrations in starch solutions were above 1 mol/L and the absorption time was above 6 h. The starch paste viscosity was lowered by addition of sodium chloride possibly through a competition of combination of amylose with water molecules.
