玉米醇溶蛋白脱色方法的研究 被引量:1

摘要 以玉米蛋白粉为原料提取玉米醇溶蛋白,对玉米醇溶蛋白的脱色方法进行研究。分别采用无水乙醇,硅藻土以及活性炭对玉米醇溶蛋白进行脱色,通过对玉米醇溶蛋白的脱色率,蛋白损失率的比较,确定了活性炭为最合适脱色剂,并用其对玉米醇溶蛋白的脱色进行了单因素和正交试验,比较各因素对脱色效果的影响。结果表明,活性炭最适脱色工艺为:活性炭用量3%,温度60℃,时间60 min,在此条件下,脱色率为81.8%,蛋白损失率为5.0%。 Absolute alcohol, diatomite and activated carbon were separately used for the decolofization of zein from corn glutenmeal. Activated carbon displayed the proper decolorization effects on zein in terms of discolored rate and loss rate of protein. Withsingle factor and oahogonal test, the decolorization effects of activated carbon on zein were compared. The results showed that theproper decolofization conditions were as follow activated carbon 3%, temperature 60 ℃, time 60 min. Under these conditions, thedecolorization rate was 81.8% and the loss rate of protein was 5.0%.
