摘要
以龙船花花序为试验材料,提取红色素,并研究pH、温度、光照、氧化剂、还原剂、蔗糖、防腐剂、金属离子等对色素稳定性的影响。结果表明:龙船花红色素在pH在1-6范围内色彩艳丽,性质稳定,并且其耐热、耐光性能较好;该色素对氧化剂H2O2较为敏感,对还原剂Na2SO3有一定耐受性;蔗糖、山梨酸钾和Na+、Mg+2、Zn+2离子对色素基本无影响,Al+3对色度有一定的影响,Cu+2、Ca+2、Fe+3对色素的颜色影响则较大。
The red pigment was extracted from flower oflxora chinensis I.am. The experiment studies also included the preliminarystudy of effects ofpH, temperature, fight, oxide, reductant, sucrose, preservative and metal ions on the stability of pigment. The resultshowed that the red pigment from flower oflxora chinensis Lain. was colorful and stability within pH1-6. It can endure heat, lightand reductant Na2SO3, but not oxidant 14202. It is also found in the experiments that sucrose, preservative potassium sorbate and metalions such as Na+, Mg+2, Zn+2 do not basically exert negative effect on the stability of the pigment while ml+3 have faintly negativeeffects on the chroma, and the ions such as Cu+2, Ca+2, Fe+3 have changed the color of pigment solution and influenced on the chromaof pigment.
