摘要
以铁棍山药为原料,研究铁棍山药多糖肽的提取工艺及其抗氧化性质。结果表明,铁棍山药多糖肽提取最佳工艺条件为物料粒径为79.0目,超声功率为357.5 W,超声时间为35.8 min,液料比为25.8︰1(mL/g)。铁棍山药多糖肽具有较好的还原能力,高于对照组VC,而且对DPPH·有较强清除能力,随着铁棍山药多糖肽质量浓度的增加,其清除能力逐渐增强,明显高于对照组VC。
Discuss the extraction technology and antioxidation of glycoprotein from iron stick yam. The optimum extractioncondition of glycopmtein from iron stick yam was determined, that the particle size of the material 79.0 meshes, ultrasonic frequency357.5 W, ultrasonic time 35.8 min, solution to material ratio 25.8 1 (mL/g). The glycopmtein from iron stick yam had good reducingpower which was higher than VC, and had strong scavenging ability to DPPH.. The scavenging ability strengthened gradually withthe concentration ofglycoprotein from iron stick yam increasing, which was significantly higher than the scavenging ability of VC.
