池沼公鱼不同部位中脂肪酸成分的GC-MS分析

摘要 采用气相色谱质谱法对池沼公鱼不同部位中脂肪酸组成进行了分析。利用索氏提取法萃取池沼公鱼鱼头、肌肉和内脏中的脂溶性成分,经甲酯化处理后用气相色谱-质谱联用技术(GC-MS)分离和鉴定,运用面积归一化法确定各个成分的相对百分含量。试验结果表明,池沼公鱼不同部位鱼头(37.25%),鱼肉(29.87%),鱼内脏(67.28%)中脂肪含量明显不同;脂肪酸成分组成相近,主要有肉豆蔻酸,棕榈油酸,棕榈酸;(E)-9-十八碳烯酸,花生四烯酸,顺式二十碳五烯酸,二十二碳六烯酸及二十二碳五烯酸等;脂肪酸成分含量分布有明显区别,鱼内脏中含有丰富的EPA、DHA。池沼公鱼的营养价值较高,具有很好的综合开发利用价值。 The research aimed to determine and analyze the fatty acid compositions ofHypomesus olidus different parts. Thelip soluble components were extracted from Hypomesus olidus different parts by Soxhlet extraction respectively. The extractedfatty acids were identified by gas chromatography-mass spectrometry (GC-MS) after methyl etherifieation treatment, and therelative percentage of each component was confirmed by peak-area normalization method. The test results show that, the fatcontent in different parts ofHypomesus olidus was obviously different, the head (37.25%), muscle (29.87%), visceral (67.58%).The fatty acid compositions were similar in different parts of Hypomesus olidus, main components of unsaturated fatty acidswere paimitoleic acid, 9-octadecenoic acid, all z, 5, 8, 11, 14, 17-eicosapentaenoic acid, 4, 7, 10, 13, 16, 19-docosahexaenoicacid, etc; the main components of saturated fatty acids were palmitic acid, tetradecanoic acid, octadecanoic acid, etc.The distribution of fatty acid contents has the obvious difference in different parts, EPA and DHA content in the visceral wassignificantly higher than that in other parts. This result provides the nutrition and health value of Hypomesus olidus was higherand it had comprehensive development and utilization prospect.
